Preparation

  • Gather all the ingredients and measure them accurately.
  • Preheat oil in a deep-fryer or large skillet over medium heat.

Mixing Ingredients

  • In a large bowl, mix the cornmeal, flour, sugar, baking powder, baking soda, and salt thoroughly.
  • In another bowl, whisk together the buttermilk, eggs, and melted butter until well combined.
  • Create a well in the center of the dry mixture and pour in the wet ingredients, stirring gently until just combined.
  • Fold in the corn kernels, diced bell pepper, sliced green onions, and cayenne pepper until evenly mixed.

Frying

  • Once the oil is hot, carefully drop spoonfuls of the batter into the fryer, ensuring not to overcrowd.
  • Fry for about three to four minutes on each side until golden brown.
  • Remove fritters from the oil and drain on paper towels before serving.

Notes

Ensure the oil temperature is right; too low makes fritters greasy, too high burns them quickly. Customize your fritters with additional vegetables if desired.
