Preparation

  • In a large skillet, heat two tablespoons of olive oil over medium heat. Add the diced onion and minced garlic, cooking until they turn translucent and aromatic, about 3-4 minutes.
  • Season the chicken thighs with salt and pepper, then add them to the skillet. Brown the chicken on both sides for roughly 5 minutes per side.

Cooking

  • Add the long-grain rice to the skillet and stir to combine with the juices. Then add two cups of chicken broth, half a cup of BBQ sauce, and a quarter cup of honey. Stir well and bring to a boil.
  • Reduce the heat to low, cover, and let it simmer for about 20 minutes until the rice has absorbed the liquid and the chicken is tender.
  • Remove the lid, fluff the rice gently with a fork, and garnish with chopped green onions before serving.

Notes

For enhanced flavor, consider marinating the chicken in BBQ sauce and honey for at least an hour before cooking. This dish is versatile; you can add your favorite vegetables or spices according to taste.
