Preparation

  • Heat a large skillet over medium-high heat and add olive oil.
  • Season chicken thighs with salt and pepper, then add to the skillet. Cook for 5-7 minutes on each side until golden brown.
  • Remove chicken from the skillet and set aside.
  • In the same skillet, toast the long-grain rice for 1-2 minutes, stirring frequently.

Cooking

  • Pour in the chicken broth and honey BBQ sauce. Add garlic powder, onion powder, and smoked paprika. Stir to combine and bring to a boil.
  • Reduce heat to low and return the chicken to the skillet.
  • Layer frozen mixed vegetables on top, cover the skillet, and let it simmer for 20-25 minutes until the rice is tender.
  • Let it sit covered for 5 minutes off the heat, then fluff rice with a fork.
  • Garnish with chopped green onions if desired and serve.

Notes

Adjust spices based on preferences. Use low-sodium chicken broth if desired, and feel free to swap in any available vegetables.
