Ingredients
  

For the marinade

  • 1 pound boneless, skinless chicken thighs Tender and absorbs marinade flavors well.
  • 1/4 cup soy sauce For salty umami taste.
  • 2 tablespoons brown sugar To introduce a subtle sweetness.
  • 1 tablespoon gochujang (Korean red pepper paste) Adds heat; can substitute with red pepper flakes and a little extra sugar.
  • 2 cloves garlic, minced Enhances the dish with aromatic richness.
  • 1 teaspoon ginger, grated For extra flavor.
  • 1 tablespoon sesame oil Adds flavor and helps in cooking.

For the bowl

  • 2 cups cooked rice (white or brown) Choose based on preference.
  • 1 cup fresh vegetables (such as cucumbers, carrots, and bell peppers) Chopped into bite-sized pieces.
  • to taste green onions, chopped for garnish
  • to taste sesame seeds, for garnish
  • 2 pieces lime wedges, for serving Adds zesty brightness.

Instructions
 

Marinate the Chicken

  • In a mixing bowl, combine soy sauce, brown sugar, gochujang, minced garlic, grated ginger, and sesame oil. Stir until smooth.
  • Cut the chicken thighs into bite-sized pieces and add them to the marinade, ensuring they're well-coated. Marinate in the refrigerator for at least 15 minutes.

Prepare Rice and Vegetables

  • Cook the rice according to package instructions.
  • Wash and chop your fresh vegetables into bite-sized pieces.

Cook the Chicken

  • Heat a skillet or grill pan over medium-high heat and add a splash of sesame oil.
  • Carefully place the marinated chicken in the pan and cook for about 6-8 minutes, turning occasionally until cooked through and caramelized.

Assemble the Bowls

  • Spoon a generous serving of cooked rice into each bowl.
  • Top with the cooked marinated chicken and the chopped vegetables.
  • Garnish with chopped green onions, sesame seeds, and a lime wedge.

Notes

Prep ingredients ahead of time for a quicker meal. Feel free to substitute chicken with tofu or another protein. Storage: Keep in airtight containers for 3-4 days in the refrigerator.
