For the cake

  • 1.5 cups gluten-free all-purpose flour Use a blend containing xanthan gum.
  • 1 cup unsweetened cocoa powder Enhances the chocolate flavor.

  • 0.5 teaspoon salt Enhances flavor.
  • 1 cup granulated sugar Adds sweetness.
  • 0.5 cup brown sugar Adds moisture and flavor.
  • 3 large eggs Adds richness.
  • 2 teaspoons vanilla extract Enhances flavor.
  • 1 cup buttermilk Keeps the cake tender.
  • 0.5 cup vegetable oil Maintains moisture.
  • 1 cup hot water Activates cocoa powder.

For the frosting

  • 1.5 cups unsalted butter Whipped until fluffy.
  • 4 cups powdered sugar Adds sweetness to the frosting.
  • 0.5 cup unsweetened cocoa powder For chocolate flavor in frosting.
  • 0.5 cup heavy cream To achieve creamy consistency.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and prepare two 9-inch round cake pans by greasing them and lining with parchment paper.
  • In a large bowl, whisk together the gluten-free flour, cocoa powder, baking powder, baking soda, and salt.
  • In another bowl, combine granulated sugar, brown sugar, eggs, vanilla extract, and buttermilk; whisk until smooth and creamy.
  • Gradually mix in the vegetable oil and then the dry ingredients until well blended.
  • Slowly add the hot water until the batter is smooth.
  • Divide the batter evenly between the prepared pans and smooth the tops.

Baking

  • Bake for 30 to 35 minutes, or until a toothpick inserted comes out clean.
  • Let the cakes cool in the pans for about 10 minutes before transferring to a wire rack to cool completely.

Frosting

  • Beat the unsalted butter until fluffy.
  • Gradually incorporate powdered sugar and cocoa powder, alternating with heavy cream until smooth.
  • Once the cakes are completely cooled, frost the top of one layer, place the second layer on top and frost the top and sides of the cake.

Notes

If desired, enhance flavors with chocolate chips or nuts. Store wrapped in cling film to keep moist. For gluten-free flour, ensure it contains xanthan gum.
